Description
I am not a bushcrafter...nor am I a survivalist, I am not a mountain man or a modern primitive camper. What I am is a woodsman. Someone that incorporates all the skills, tools and learning from any outdoor activity. Hunting, fishing, camping (modern and primitive) survival and bushcraft and incorporate all these rudimentary skills into one unspecialized genre...the woodsman. Why limit yourself to one specialized set of skills when you can open your world to all of them. There is no end to the learning, I am no expert and will never claim to be. There is so much more I can learn and no matter how high that mountain you climb no one will ever reach the top. It is an endless endeavor and we should be humble and happy for the chance to experience and learn as we grow and share what we learn to help make the journey worth the trip.

Love making venison summer sausage! I use 5 lbs venison and 5 lbs cheap 73% store bought ground beef. Turns out awesome!

Thanks for sharing. Your recipe is very similar to mine. I do dunk my finished sausage into ice water immediately after removing from the smoker and leave there until the internal temp decreases to below 100*F and hang at room temp until air dried.
