I'd love to see the progress! I see your jars aren't sealed which makes perfect sense. I say this because the last time I tried to ferment anything in closed kilner jars, I had 3 explosions in very quick succession as one set off the next & so on... Sauerkraut on the kitchen ceiling & every other surface too! I tend to use crocks now LOL
