On my 1st Deer, I usually, grind everything, except the Tenderloins, and Backstraps. Add about 20% Pork Fat, and use Leggs Old Plantation Sausage Seasonings. It is pre mixed, comes in a bag, with enough for 25 lbs of meat. (I spice it up a bit, with crushed Red Pepper) Just had some, this morning....delicious!

I just made this yesterday. I used 20 lbs venison and 5 lbs pork fat. I did a double coarse grind and then threw everything in my mixer for about 5 minutes. This is by far the BEST venison breakfast sausage I have ever had/made. I'll be tweaking the recipe a little bit with the difference spices, but this is a great start for a basic breakfast sausage! Thank you!

Just made this and it turned out pretty tasty. I would add some additional salt maybe a 1/2 teaspoon more then I think it would be improved. My wife also thought substituting the brown sugar for maple syrup would be a good addition or maple sugar. If you use maple syrup water would need to be reduced to compensate.

I found out after your done grinding all the meat. Run a few crackers through the grinder. Helps clean up amazing
