This was a great tutorial. I like how it seemed rough before the render but then you showed the results. I probably wouldn't have tested it.

the shape builder tool can automatically cut out the shapes without you having to copy and pastee every colour. just select everything, use the shape builder tool to click once inside the shape you want to cut out from the rest. you lose the color but re coloring is faster. give it a try.....awesome tutorial!

@2:21, you don't have to do all that, just select all the shapes and choose Merge in the pathfinder and it will delete any overlapping shapes and then you will have your individual pieces separated.

This showed up in my timeline and I got curious. Keep up with your channel. I actually love the short format and easy to follow. This is perfect for beginners I can tell. I use to teach illustrator for teens and it’s exactly what beginners need to get familiar with the tool without the feel of having a class but an experience.

I mostly use Photoshop and don't really know much about illustrator but your tutorial was easy to follow along. I hope you also cover some basic of illustrator along the way. It will be really helpful.
