Amon's Stand [Fiercest Warrior] has no weakness!

I like how at 0:29 Amon just stands there like he doesn't even know what the hell just happened either.

There's a somewhat justifiable reason as to why this happens. Jo's Mad Dog style is technically still considered as a playable character, along with the DoD style he uses which is why unlike other bosses, he doesn't turn around while still attacking after you do a counter attack because the player isn't able to do that. At rare moments the game will get confused on which of the styles to swap from, leaving him using Thug style with the regular knife attack causing this glitch to happen.

Ironically Amon using the normie knife moveset is 10 times more dangerous than him using the Mad Dog moveset.
