Ever since moss was added to the game, I've been doing something similar in my skyblock world. You can bonemeal a spruce 2x2 tree on moss to convert a bunch of it to podzol. You could also do pig man bartering for gravel and make coarse dirt or azalia trees on moss for rooted dirt, but I prefer the spruce tree method. With wandering trader and villager trades, you can do some insane things. Get dirt, convert to mud, place over drip stone to turn to clay, put clay blocks in furnace to get terracotta. I'm currently (slowly) stocking up on uncolored terracotta, which mason villagers don't sell to make a mesa biome.
