Sometimes if you put down a profession block per say a lectern it will speckle green. That means a villager changed its profession and that means eventually that villager will walk towards the profession block. I put a lectern down to change a farmer but instead the block had random green specks come from it and I looked out the window to see a librarian running towards the building with the lectern.

just make sure that the villager whose profession you want to change is contained in a space at least 100 blocks (maybe just a few extra just to be safe) away from a village. give him a bed and the profession block you want. as long as it's the villager working hours, he will change. and once you trade with him, his profession is locked. you CANNOT change it.

Does any one else have the issue of villagers growing up and picking a random profession despite having no work block in the area for them to gain that profession???
