To put it short, prey animals of tyrannosaurus in general were not easy to access since most of them were prepared just as well; be it for flight or fight. If it isn't the prey that doesn't deter a rex, it's competition with another rex that will.

Tritops the way its head is mounted to the body is a ball and socket set up. This would make the animals head turn with great speed when a larger animal is trying to get around to get to a soft spot.

The fact that T-Rex, one of the most dominant predators ever, had to think twice before attacking certain animals just proves how dangerous Hell Creek was! Triceratops alone was like a walking tank with built-in weapons—hunting one must have been a high-risk, high-reward situation!

You also gotta take into account that most plant eating animals tend to run, not because they can't fight back, but because it's their nature. They get spooked and run without thinking. The instinct to fight a predator is more rare in them.
