Grandma Betty's poached salmon. Poach as above. Take about 3oz decent ketchup, 3oz fresh, home made mayonnaise, 2-3 TBS poaching liquid, a major shot of hot sauce, salt/pepper to taste, possibly a little lemon juice. Mix well, the color of the sauce should be slightly deeper than the orange color of the fish. Cover the fish in the sauce, refrigerate over night. Magic! Yes, ketchup can actually do that (especially when it too is home made)
